Charcoal chicken marinade with orange flavor
Ingredients
- Whole chicken cut into medium size pieces.
- One hundred grams of orange juice.
- 100 grams of olive oil.
- A quarter cup of hot sauce.
- A quarter cup of mustard.
- A tablespoon of vinegar.
- Two teaspoons of grated orange peel.
- A quarter of a cup of honey.
- Eight teaspoons of butter.
- A quarter cup of fresh orange juice.
- Two teaspoons of fresh orange peel.
- A quarter cup of barbecue paste.
- Four teaspoons of mustard.
- Sprinkle of mixed spices.
How to prepare
Put the orange juice, olive oil, hot pepper, vinegar, and orange peel in a large bowl. Mix all ingredients together well, until completely homogeneous. Put the chicken pieces inside the resulting mixture, cover it with a plastic bag, and put it in the refrigerator and leave it overnight. Remove the chicken pieces from the mixture, put them on the coals, and leave them for about ten minutes.
Next remove the chicken from the coals, before it is fully cooked. Put the butter in a wide skillet over medium heat, and let it melt completely. Add honey, orange juice, BBQ sauce, orange peel, mustard and mixed spices. Stir all ingredients together well, to get a cohesive mixture.
Grease the chicken pieces with the resulting mixture, and return them to the coals again for a period of no less than five minutes, until they are completely cooked and browned on all sides.
Marinating chicken on charcoal with yogurt and coriander
Ingredients
- Four pieces of chicken breast.
- Four hundred grams of yogurt.
- Two hundred grams of finely chopped coriander.
- Half of a finely chopped onion.
- Six cloves of crushed garlic.
- Two teaspoons of fresh lemon juice.
- Two teaspoons of garam masala.
- a tablespoon of salt.
- Half a tablespoon of black pepper powder.
How to prepare
Put the yogurt, coriander, onion, oil, and garlic in the electric mixer, and turn it on on a medium setting, and mix them well.
Add lemon juice, garam masala, salt and black pepper, while continuing to mix, until the ingredients overlap with each other well. Put the chicken breasts in a wide bowl. Pour the marinade over the chicken, and stir well.
Cover the bowl and put it in the refrigerator for at least three hours. Put the chicken breasts on the coals, and leave them for about a quarter of an hour, until they are cooked and browned well.
